Bulgur
It has an indispensable place in Middle Eastern cuisines. The
one for pilaf consists of dried and broken grains after
steaming.
It is generally sold as coarse, medium and fine bulgur in the
market. Just like with rice. Pilaf varieties are famous.
The one for pilaf is coarse bulgur. However, bulgur is also
known in many Middle Eastern cuisines for its vicious salads. It
is one of the main ingredients of kibbeh.
